RECIPE : GRILLED PIZZA by Tom Nicholson
I have lived in Columbia County my whole life. I learned to cook from my mother. I have the one sister and 4 brothers and my mother was famous for making great Italian food. She always kept it simple, and that's what I have done with my outdoor pizza recipe.
Preheat the out door gas grill to around 350 to 400 degrees.
Make sure to have all of your ingredients on a table next to the grill.
Place a tablespoon of olive oil on a pizza tin.
Place the pizza dough on the tin and pound it out to the edges of the tin, it doesn't have to be perfectly round.
Fold the dough in half, and them gently lift it onto the grill and unfold it.
Cook for 3 minutes, then using a spatula flip the dough over.
Then as quick as you can. Put on your pizza sauce, followed by your cheese, then what every topping you want.
Quickly close the grill lid and check every, 5 minutes till the cheese melts and the bottom of the pizza is nice and crispy.
A simple delicious summer dish, and a new twist on outdoor cooking and entertaining. You can make the best pizza you ever had in your own back yard. Give it a try. It is very simple and with very little practice you will be come a pro.
