IRISH SODA BREAD

Derived from a very traditional recipe passed down from my great-grandmother, who grew up in Ireland before coming to America, this recipe has picked up some non-traditional ingredients through the generations that make it lighter, moister, and better adapted to the modern kitchen.

What You’ll Need:
Large mixing bowl
Medium mixing bowl
9-inch round cast iron pan (loaf pans will work well also)

Ingredients:
2½ cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
1 cup raisins
1 cup currants
1 egg ( beaten)
1 cup sour cream
1/4 cup butter ( softened)
Cooking spray

Optional:
2 tablespoon caraway seeds

 

Preheat oven to 325 degrees. Heat cast iron pan in oven.

Mix all dry ingredients in large bowl. Add raisins and currants

Mix egg, sour cream, and butter in medium bowl.

Add wet ingredients to the dry ingredients and mix well.

Remove pan from oven and spray with cooking spray.

Sprinkle bottom of the pan with flour.

Place batter in pan.

Bake for 45 minutes.
